Actually it has nothing to do with the performance, it will simply allow the web drivers to be installed on an unsupported Mac. Your GPU uses the Apple's builtin drivers that are provided by Apple, if you want to install the nVidia's Web Driver you can try this driver: and install cuda.

We reported yesterday that early evidence seemed to indicate that Apples latest version of OS X (renamed macOS), macOS Sierra, runs absolutely fine on any Mac Pro with the 5,1 firmware. After a great amount of interest from our clients, we’re happy to announce that we’ve tested macOS Sierra in house using our developers account, and indeed 2009 (upgraded to 5,1 firmware), 2010 & 2012 Mac Pro 5,1 systems all run the latest OS absolutely fine. Again, we wouldn’t recommend installing macOS Sierra on your Mac Pro until all the bugs have been worked out, but it’s always nice to see Apple continuing to support the Mac Pro 5,1.
